2 boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 pint cherry tomatoes, halved
1 small shallot, finely diced
3 garlic cloves, minced
2 tablespoons balsamic vinegar
1 tablespoon balsamic glaze
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cups arugula
1 cup cooked quinoa
2 tablespoons grated Parmesan cheese
1 tablespoon balsamic glaze for drizzling
Instructions
Season the chicken breasts with garlic powder, Italian seasoning, paprika, salt, and black pepper.
Heat 1 tablespoon olive oil in a skillet over medium heat. Cook the chicken for 5 to 6 minutes per side, or until golden brown and cooked through. Remove from the skillet and let it rest for 5 minutes.
In the same skillet, add 1 tablespoon olive oil. Add the shallot and cook for 1 to 2 minutes until softened.
Stir in the garlic and cherry tomatoes. Cook for 4 to 5 minutes, stirring gently, until the tomatoes begin to soften and burst.
Add the balsamic vinegar, balsamic glaze, salt, and black pepper. Stir and cook for 1 more minute until the mixture is glossy.
Slice the chicken breasts.
Divide the arugula between serving bowls and add the cooked quinoa.
Top each bowl with sliced chicken and spoon the warm tomato mixture over the top.
Finish with grated Parmesan and an extra drizzle of balsamic glaze before serving.
Notes
Let the chicken rest before slicing for juicier results.
