Hearty 3-Hour Beef and Gravy That Melts in Your Mouth

Beef and gravy

Tender beef and gravy served over creamy mashed potatoes, a classic comfort food dinner.

Ingredients

  • 3 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper, to taste
  • 3 lbs russet potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup milk

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season beef with salt and pepper, then sear on all sides until browned. Remove and set aside.
  3. Add onion to the pot and cook until soft, about 4 minutes. Stir in garlic and cook for 30 seconds.
  4. Sprinkle flour over onions and stir to coat.
  5. Slowly pour in beef broth and Worcestershire sauce, stirring until smooth.
  6. Add thyme and rosemary, then return beef to the pot.
  7. Cover and simmer on low heat for 2½–3 hours, until beef is very tender and shreddable.
  8. Meanwhile, boil potatoes in salted water until fork-tender, about 15 minutes.
  9. Drain potatoes and mash with butter, milk, salt, and pepper until creamy.
  10. Shred beef slightly and serve hot over mashed potatoes with plenty of gravy.

Notes

  • For extra flavor, you can add a splash of red wine to the gravy.
  • Leftovers can be stored in the fridge for up to 3 days.
