  • 2 large eggs
  • 3/4 cup Italian-style breadcrumbs (plus extra for coating)
  • 2 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp dried parsley (optional)
  • Oil spray or vegetable oil

Instructions

  1. Steam broccoli until tender, cool, and finely chop.
  2. Mix broccoli, cheddar, Parmesan, eggs, breadcrumbs, flour, garlic powder, onion powder, salt, pepper, and parsley in a bowl.
  3. Shape mixture into balls, stuffing each with a mozzarella cube.
  4. Coat balls in extra breadcrumbs and chill for 10 minutes.
  5. Air fry at 375°F for 10–12 minutes, bake at 400°F for 18–20 minutes, or fry at 350°F for 2–3 minutes.
  6. Serve hot.
