  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups mixed greens
  • 1 cup shredded Brussels sprouts or chopped green lettuce
  • 1 avocado, diced
  • 1/3 cup buffalo sauce

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Toss the diced sweet potatoes with olive oil, paprika, garlic powder, salt, and black pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 20 to 25 minutes, flipping halfway through, until tender and lightly browned.
  4. Heat olive oil in a skillet over medium heat.
  5. Add the ground turkey, onion powder, garlic powder, paprika, salt, and black pepper.
  6. Cook the turkey for 6 to 8 minutes, breaking it apart as it cooks, until fully cooked and browned.
  7. Add the mixed greens and shredded Brussels sprouts to serving bowls.
  8. Top with the roasted sweet potatoes, cooked ground turkey, and diced avocado.
  9. Drizzle buffalo sauce generously over the bowls and serve immediately.
