Spicy Cajun Chicken Sloppy Joes in Just 30 Minutes

A spicy twist on classic sloppy joes using ground chicken and Cajun flavors.

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1/2 cup yellow onion, finely diced
  • 1/2 cup green bell pepper, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning (start with 1 1/2 tbsp if salt-sensitive)
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1 tbsp Worcestershire sauce
  • 1 tsp hot sauce (optional, to taste)
  • 1 cup shredded cheddar cheese
  • 4 brioche buns (or hamburger buns)
  • Optional: sliced pickles, extra cheese, or green onions for topping

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook 3–4 minutes until softened. Stir in garlic for 30 seconds.
  2. Add ground chicken and cook, breaking it up, until no longer pink (about 5–6 minutes).
  3. Sprinkle in Cajun seasoning, smoked paprika, and black pepper. Stir well.
  4. Mix in tomato paste, then pour in chicken broth. Simmer 2–3 minutes to reduce slightly.
  5. Stir in heavy cream, Worcestershire sauce, and hot sauce (if using). Simmer 3–5 minutes until thick and saucy.
  6. Reduce heat to low and stir in shredded cheddar until melted and creamy.
  7. Spoon the Cajun chicken mixture onto buns, add toppings if you like, and serve warm.

Notes

  • Adjust Cajun seasoning to taste.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Serve with pickles or green onions for extra flavor.
