  • 1 zucchini, sliced
  • 1 bell pepper (any color), sliced
  • ½ red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1½ tsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Optional: red pepper flakes

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add sliced chicken sausage and cook until browned on both sides.
  4. Add zucchini, bell pepper, red onion, and cherry tomatoes.
  5. Season with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  6. Sauté until vegetables are tender and lightly caramelized.
  7. Stir cooked rice into the skillet and toss until evenly combined and heated through.
  8. Adjust seasoning as needed and serve warm.
