A comforting and cheesy beef macaroni casserole that’s perfect for family dinners. This easy-to-make dish combines ground beef, macaroni, and a rich cheese sauce for a hearty meal.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups elbow macaroni (about 8 oz), uncooked
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk
  • 1 cup sour cream
  • 3 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella (optional, for extra stretch)

Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
  2. Cook macaroni in salted water until just al dente. Drain and set aside.
  3. In a large skillet over medium heat, cook ground beef and onion until browned. Drain excess grease. Add garlic and cook 30 seconds.
  4. Season with salt, pepper, paprika, and Italian seasoning.
  5. Stir in cream soup and milk until smooth. Remove from heat and mix in sour cream.
  6. Add cooked macaroni to the beef mixture and stir to coat.
  7. Pour into the baking dish. Sprinkle 1 1/2 cups cheddar over the top (plus mozzarella if using).
  8. Bake 20–25 minutes until hot, bubbly, and golden-browned on top. Rest 5 minutes, then scoop and serve.

Notes

  • For extra flavor, you can add a dash of Worcestershire sauce to the beef mixture.
  • Leftovers can be stored in the fridge for up to 3 days.
  • You can substitute the cream of mushroom soup with cream of celery or cream of chicken for a different flavor.
