30-Minute Cheesy Ground Beef Rotini That Melts Your Heart

  • 12 ounces rotini pasta
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small yellow bell pepper, thinly sliced
  • 1 small orange bell pepper, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes, plus more for garnish
  • 1 cup heavy cream
  • 1/2 cup beef broth
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the rotini in salted water according to the package directions until al dente. Drain and set aside.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain excess grease if needed.
  3. Add the olive oil, sliced bell peppers, and garlic to the skillet. Cook for 3 to 4 minutes, until the peppers begin to soften.
  4. Stir in the Italian seasoning, onion powder, salt, black pepper, and crushed red pepper flakes.
  5. Pour in the heavy cream and beef broth, then stir well and let the mixture simmer for 2 to 3 minutes.
  6. Add the cooked rotini to the skillet and toss to coat in the sauce.
  7. Stir in the mozzarella and Parmesan cheese until melted and creamy.
  8. Sprinkle with chopped parsley and extra crushed red pepper flakes before serving.

Notes

  • Adjust the amount of crushed red pepper flakes for more or less heat.
  • Substitute half-and-half for heavy cream if needed.
  • Use any color bell peppers you prefer.
