A hearty and cheesy smoked sausage and potatoes bake, perfect for an easy weeknight dinner.

Ingredients

  • 2 lbs baby gold potatoes, sliced into 1/2-inch rounds
  • 14 oz smoked sausage (or kielbasa), sliced into coins
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 3/4 tsp kosher salt
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped parsley (or dried parsley)

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9×13 baking dish or foil-line a sheet pan.
  2. Add sliced potatoes to the pan. Drizzle with olive oil and toss with garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
  3. Bake for 25 minutes, stirring once halfway through, until potatoes start to soften and brown at the edges.
  4. Add the sliced smoked sausage and toss everything together. Bake 15 minutes more.
  5. Sprinkle mozzarella and cheddar evenly over the top. Return to the oven for 5–8 minutes, until the cheese is melted and bubbly with golden spots.
  6. Finish with parsley and serve hot.

Notes

  • Use any smoked sausage or kielbasa of your choice.
  • For extra crispiness, broil for 1–2 minutes after melting the cheese.
  • Store leftovers in an airtight container for up to 3 days.
