  • 2 large zucchini
  • 1 cup ricotta cheese
  • 4 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons fresh dill or parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F.
  2. Slice the zucchini lengthwise into thin strips using a mandoline or vegetable peeler.
  3. Lay the zucchini slices on paper towels, sprinkle lightly with salt, and let them sit for 10 minutes to release moisture. Pat dry.
  4. In a mixing bowl, stir together the ricotta cheese, cream cheese, 1/2 cup mozzarella, Parmesan, egg, dill, garlic powder, Italian seasoning, salt, and black pepper until smooth.
  5. Spread a small spoonful of filling onto one end of each zucchini strip and roll it up.
  6. Place the zucchini rolls seam-side down in a lightly greased baking dish.
  7. Spoon marinara sauce over the tops and sprinkle with the remaining 1/2 cup mozzarella cheese.
  8. Drizzle lightly with olive oil.
  9. Bake for 20 to 25 minutes, until the cheese is melted and bubbly.
  10. Broil for 1 to 2 minutes for extra golden tops, then serve warm.
