35-Minute Chicken Potato Soup for Cozy Comfort

Chicken potato soup

A hearty and comforting chicken potato soup, perfect for cozy winter meals. This easy one-pot dinner is both healthy and delicious.

  • 2 cups cooked chicken breast, chopped or shredded
  • 3 cups potatoes, peeled and diced
  • 1 cup carrots, sliced
  • 1/2 cup celery, chopped
  • 1/2 cup onion, diced
  • 6 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Red pepper flakes, optional
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 4–5 minutes until softened.
  3. Add diced potatoes, chicken broth, garlic powder, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are fork-tender.
  5. Stir in cooked chicken and simmer for an additional 5 minutes.
  6. Taste and adjust seasoning as needed.
  7. Ladle into bowls and garnish with fresh parsley and red pepper flakes if desired.

Notes

  • For extra flavor, use homemade chicken broth.
  • Adjust the spice level by adding more or less red pepper flakes.
  • Store leftovers in an airtight container for up to 3 days.
