20-Minute Creamy Cheesy Ramen That Feels Like a Hug

A quick and creamy ramen dish with smoked sausage and cheddar cheese.

  • 2 packs ramen noodles (discard seasoning packets)
  • 1012 oz smoked sausage (kielbasa), sliced into coins
  • 1 Tbsp butter
  • 2 cloves garlic, minced (optional)
  • 2 cups chicken broth (or water)
  • 1/2 cup milk (whole milk is best)
  • 1/2 cup heavy cream (or more milk)
  • 1 cup shredded cheddar cheese (or a cheddar blend)
  • 2 Tbsp cream cheese (optional, extra creamy)
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • Pinch red pepper flakes (optional)
  • 1 Tbsp chopped parsley (for topping)

Instructions

  1. Brown the sausage: Heat a large skillet over medium-high heat. Add sliced smoked sausage and cook 3–4 minutes, stirring, until browned. Remove to a plate.
  2. Start the sauce: Reduce heat to medium. Add butter (and garlic if using) and cook 30 seconds.
  3. Cook the noodles: Pour in chicken broth and bring to a simmer. Add ramen noodles and cook 2–3 minutes, flipping/stirring, until just tender.
  4. Make it creamy: Stir in milk and cream. Simmer 1–2 minutes until slightly thickened.
  5. Cheese it up: Turn heat to low. Add cheddar (and cream cheese if using) and stir until melted and glossy.
  6. Finish: Add browned sausage back into the skillet. Season with pepper, smoked paprika, and red pepper flakes to taste.
  7. Serve: Sprinkle with chopped parsley and serve hot.

Notes

  • Use whole milk for a richer taste.
  • Adjust spice level with red pepper flakes.
  • For extra creaminess, add cream cheese.
