  • 12 oz egg noodles
  • 1 lb boneless, skinless chicken breast, cut into bite-size pieces
  • 2 tbsp olive oil (or butter)
  • 1 cup carrots, diced small
  • 1/2 cup onion, finely diced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 1/2 tsp salt (plus more to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning (optional)
  • 1/3 cup grated Parmesan (optional, for extra richness)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook egg noodles according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook 5–7 minutes until browned and cooked through. Remove to a plate.
  3. In the same skillet, add onion and carrots. Cook 4–5 minutes until softened. Add garlic and cook 30 seconds.
  4. Sprinkle flour over the veggies and stir 1 minute.
  5. Slowly whisk in chicken broth, scraping up any browned bits. Simmer 3–4 minutes until slightly thickened.
  6. Stir in heavy cream (and Parmesan if using). Simmer 2–3 minutes until creamy.
  7. Add cooked chicken back to the skillet, then toss in the cooked noodles. Stir until everything is coated and warmed through.
  8. Taste and adjust seasoning. Sprinkle with fresh parsley and serve hot.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Add peas or mushrooms for extra veggies.
  • Leftovers keep well refrigerated for up to 3 days.
