  • 4 bone-in, skin-on chicken thighs
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 cup long-grain white rice (or basmati)
  • 1 3/4 cups chicken broth
  • 1 tbsp olive oil (or butter)
  • 1 small yellow onion, thinly sliced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup plain Greek yogurt
  • 1 small garlic clove, grated
  • 1 tbsp lemon juice
  • 1/2 tsp kosher salt
  • Black pepper, to taste
  • 1/2 cup chopped jalapeños (fresh or pickled)
  • 1/3 cup chopped parsley
  • 2 tbsp chopped dill
  • 1 small garlic clove, finely minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice (or white vinegar)
  • Pinch of salt + black pepper
  • Extra olive oil for drizzling
  • More chopped dill/parsley
  • Cracked black pepper

Instructions

  1. Pat chicken thighs dry. Season all over with salt, pepper, garlic powder, and smoked paprika.
  2. Heat a large skillet over medium-high. Add 1 tbsp olive oil. Place chicken thighs skin-side down and sear 8–10 minutes until deeply golden and crisp. Flip and cook 5 minutes more.
  3. Reduce heat to medium-low, cover, and cook 10–12 minutes (or until chicken reaches 175°F for thighs). Remove to rest.
  4. In a pot, heat olive oil (or butter). Add sliced onion and sauté 3–4 minutes until softened. Stir in rice, then add broth, salt, and pepper. Bring to a boil, cover, reduce to low, and cook 15 minutes. Rest 5 minutes, then fluff.
  5. Mix Greek yogurt, grated garlic, lemon juice, salt, and pepper until smooth and creamy.
  6. Stir jalapeños, parsley, dill, garlic, olive oil, lemon juice, salt, and pepper.
  7. Spread garlic yogurt in a swoosh around the bowl. Add onion rice in the center, top with a crispy chicken thigh, spoon herby jalapeño relish over and around, and finish with a drizzle of olive oil and cracked pepper.

Notes

  • Use fresh herbs for the best flavor.
  • Adjust jalapeño quantity based on your spice preference.
  • Let the rice rest for 5 minutes after cooking for better texture.
