1 1/2 lb sirloin steak, cut into bite-size strips or cubes
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp smoked paprika
2 tbsp olive oil
3 tbsp butter, divided
4 cloves garlic, minced
1 small onion, thinly sliced
1/2 cup beef broth
1 cup heavy cream
1 tsp Dijon mustard (optional, for depth)
1 tsp dried thyme (or 1 tbsp fresh)
1/2 tsp red pepper flakes (optional)
1 tbsp chopped fresh parsley
Lemon wedges, for serving
Instructions
Pat steak dry. Season with salt, pepper, and smoked paprika.
Heat olive oil in a large skillet over medium-high heat. Add steak in a single layer (work in batches if needed) and sear 2–3 minutes per side until browned. Remove to a plate.
Reduce heat to medium. Add 1 tbsp butter, then the sliced onion. Sauté 3–4 minutes until softened.
Stir in garlic and cook 30 seconds until fragrant.
Pour in beef broth and scrape up browned bits. Simmer 1–2 minutes.
Add heavy cream, thyme, and (if using) Dijon and red pepper flakes. Simmer 3–5 minutes until slightly thickened.
Return steak (and juices) to the skillet. Simmer 2–3 minutes until warmed through and coated.
Turn off heat and stir in remaining 2 tbsp butter. Finish with parsley and serve with lemon wedges.
