Creamy Tuscan Salmon Pasta

A rich and creamy pasta dish with perfectly seared salmon fillets, sun-dried tomatoes, and fresh spinach in a garlic Parmesan sauce.

  • 12 oz fettuccine pasta
  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup sun-dried tomatoes, sliced
  • 2 cups fresh spinach
  • 1/2 teaspoon Italian seasoning
  • Red pepper flakes (optional)

Instructions

  1. Cook fettuccine pasta according to package directions; drain and set aside.
  2. Season salmon fillets with salt, pepper, and paprika.
  3. Heat olive oil in a skillet over medium-high heat. Sear salmon for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic until fragrant.
  5. Pour in heavy cream and bring to a gentle simmer.
  6. Stir in Parmesan cheese, Italian seasoning, and sun-dried tomatoes.
  7. Add spinach and cook until wilted.
  8. Toss cooked pasta into the sauce until well coated.
  9. Place salmon fillets on top and spoon sauce over the salmon.
  10. Garnish with red pepper flakes if desired and serve hot.

Notes

  • Adjust red pepper flakes for desired spice level.
  • Freshly grated Parmesan works best for a smoother sauce.
  • Salmon can be substituted with chicken for a variation.
