  • 2 tablespoons milk

  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil or cooking spray
  • 1 bag (30 ounces) frozen shredded hash browns, thawed
  • 2 cups shredded cheddar cheese, divided
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 2 tablespoons shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F. Grease a casserole dish.
  2. Mix hash browns, 1 1/2 cups cheddar cheese, cream of chicken soup, sour cream, melted butter, onion, garlic powder, salt, and black pepper in a bowl.
  3. Spread the mixture into the casserole dish and bake for 40 minutes.
  4. Sprinkle remaining cheese on top and bake for 10 more minutes.
  5. Pat chicken tenders dry.
  6. Whisk eggs and milk in one bowl.
  7. Mix flour, breadcrumbs, garlic powder, paprika, onion powder, salt, black pepper, and cayenne in another bowl.
  8. Dip each tender in the egg mixture, then coat in the flour mixture.
  9. Place on a parchment-lined baking sheet. Drizzle with olive oil or spray with cooking spray.
  10. Bake at 400°F for 18-22 minutes, flipping halfway.
  11. Plate tenders with casserole, top with sour cream, cheese, and avocado.
