  • 2 large fried chicken thighs or breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper, to taste
  • Oil, for frying
  • Pickle slices
  • Lettuce leaves
  • 1/2 cup mayonnaise
  • 2 tablespoons hot sauce
  • 1 tablespoon ketchup
  • 1/4 cup barbecue or sweet chili sauce (optional)

Instructions

  1. Marinate chicken in buttermilk with salt and pepper for at least 30 minutes.
  2. In a bowl, mix flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  3. Dredge chicken in seasoned flour until fully coated.
  4. Heat oil to 350°F and fry chicken until golden brown and fully cooked, about 6–8 minutes per side.
  5. Mix mayonnaise, hot sauce, and ketchup to make spicy sauce.
  6. Spread sauce on toasted buns.
  7. Layer fried chicken, pickles, and lettuce.
  8. For sticky version, brush fried chicken with barbecue or sweet chili sauce before assembling.
  9. Close sandwiches and serve hot.

Notes

  • For extra crispiness, double-dredge the chicken in flour.
  • Adjust the amount of hot sauce to control the spiciness.
  • Serve immediately for the best texture.
