  • 8 mozzarella string cheese sticks, cut in half
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 large eggs
  • 1 tablespoon heavy cream
  • 1 cup crushed pork rinds
  • 2 tablespoons olive oil spray or avocado oil spray
  • Chopped parsley, for garnish
  • Warm marinara sauce, for serving (optional)

Instructions

  1. Cut each mozzarella stick in half and place on a parchment-lined tray.
  2. Freeze the cheese sticks for 45-60 minutes to firm up.
  3. Mix almond flour, Parmesan, Italian seasoning, garlic powder, and onion powder in a bowl.
  4. Whisk eggs and heavy cream in another bowl.
  5. Place crushed pork rinds in a third bowl.
  6. Dip each cheese piece first in the flour mix, then egg mix, then pork rinds.
  7. Repeat the egg and pork rind coating for extra crispiness.
  8. Freeze coated sticks for 15-20 minutes.
  9. Preheat air fryer to 390°F or oven to 425°F.
  10. Lightly spray sticks with oil.
  11. Air fry for 6-8 minutes or bake for 8-10 minutes until golden.
  12. Garnish with parsley and serve warm.
