A simple and flavorful crockpot garlic herb chicken with carrots and potatoes, perfect for a family dinner.

  • 1 ½2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 ½ lbs red potatoes, cut into chunks
  • 1 lb baby carrots
  • 4 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp Italian seasoning
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp onion powder
  • 1 tsp kosher salt (or to taste)
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Add the potatoes and baby carrots to the bottom of the slow cooker.
  2. Place the chicken on top of the vegetables.
  3. In a bowl, whisk together melted butter, olive oil, garlic, chicken broth, Italian seasoning, thyme, rosemary, onion powder, salt, and pepper.
  4. Pour the garlic herb sauce evenly over the chicken and vegetables.
  5. Cover and cook on LOW for 6–7 hours (or HIGH for 3–4 hours) until the chicken is tender and the potatoes are fork-soft.
  6. Spoon the sauce over everything, sprinkle with fresh parsley if desired, and serve warm.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For extra flavor, sear the chicken before adding it to the slow cooker.
