  • 1 1/2 lbs baby potatoes, halved (or quartered if large)
  • 2 cups green beans (fresh or frozen)
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup carrots, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 (10.5 oz) can cream of mushroom soup
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme (optional)
  • 2 tbsp cornstarch + 2 tbsp water (optional, to thicken)

Instructions

  1. Brown ground beef in a skillet over medium-high heat until cooked through. Drain excess grease.
  2. Add potatoes, green beans, corn, peas, carrots, onion, and garlic to the slow cooker.
  3. Stir in cooked ground beef.
  4. Whisk together beef broth, cream of mushroom soup, tomato paste, Worcestershire, salt, pepper, paprika, and thyme. Pour over everything.
  5. Cover and cook on LOW 6–8 hours or HIGH 3–4 hours, until potatoes are fork-tender.
  6. Optional: For a thicker gravy, stir in the cornstarch slurry during the last 20–30 minutes on HIGH until thickened.
  7. Serve hot (great with biscuits or crusty bread).

  • Can be gluten-free with GF soup/Worcestershire.
  • Refrigerate up to 4 days in an airtight container.
