A simple and healthy BBQ glazed chicken breast served with roasted potatoes and broccoli, perfect for a weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • ½ cup barbecue sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F.
  2. Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  3. Add broccoli to the baking sheet, drizzle with olive oil, season lightly, and roast another 15 minutes until tender and golden.
  4. While vegetables cook, season chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper.
  5. Grill or pan-sear chicken over medium heat for 5–6 minutes per side until cooked through.
  6. Brush chicken generously with barbecue sauce and cook 1–2 minutes per side until sticky and caramelized.
  7. Slice chicken and serve with roasted potatoes and broccoli. Garnish with parsley.
