  • 1/2 green apple, diced
  • 1/4 cup chopped pecans
  • 2 tablespoons unsweetened shredded coconut
  • 1 teaspoon flax seeds
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 avocado, sliced
  • 1/2 cup cucumber slices
  • 1/2 cup carrot slices

Instructions

  1. Blend avocado, Greek yogurt, olive oil, lemon juice, parsley, basil, garlic, salt, and black pepper until smooth.
  2. Toss shredded chicken with the green goddess mixture until coated.
  3. Combine romaine, mixed greens, celery, green apple, pecans, coconut, and flax seeds in a large bowl.
  4. Drizzle salad with olive oil and lemon juice, then season with salt and black pepper. Toss gently.
  5. Divide salad mixture between bowls.
  6. Add a scoop of green goddess chicken to each bowl.
  7. Arrange sliced avocado, cucumber, and carrots on the side.
