  • 2 large eggs
  • 1 1/2 cups milk (dairy or unsweetened almond milk)
  • 1/3 cup maple syrup (or honey)
  • 1/4 cup melted coconut oil (or melted butter)
  • 1 tsp vanilla extract
  • 2 cups apples, peeled and diced (about 2 medium apples)
  • 1/4 cup sliced almonds (optional, for topping)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat oven to 350°F. Grease and line an 8-inch round cake pan.
  2. In a large bowl, mix oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs, milk, maple syrup, melted coconut oil, and vanilla.
  4. Pour wet mixture into oats and stir. Let sit 5 minutes.
  5. Fold in diced apples.
  6. Pour batter into the pan. Top with sliced almonds if using.
  7. Bake 35–40 minutes until golden and set.
  8. Cool 10–15 minutes, slice, and dust with powdered sugar if desired.
