A hearty cowboy breakfast skillet packed with bacon, sausage, potatoes, eggs, and cheese. Perfect for a filling morning meal.

  • 6 slices bacon, diced
  • 1 lb breakfast sausage (pork or turkey), crumbled
  • 1 1/2 lbs russet or Yukon gold potatoes, diced (about 4 medium)
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 4 large eggs
  • 23 tbsp sliced green onions (for topping)

Instructions

  1. In a large cast iron skillet over medium heat, cook diced bacon until crisp. Remove bacon to a plate.
  2. In the same skillet, cook the crumbled breakfast sausage until browned and cooked through. Transfer sausage to a plate; leave about 1–2 tbsp drippings in the skillet.
  3. Add diced potatoes to the skillet. Cook 12–15 minutes, stirring occasionally, until browned and mostly tender.
  4. Stir in onion and red bell pepper. Cook 4–5 minutes until softened. Add garlic, salt, pepper, paprika, and chili powder (if using).
  5. Mix the sausage back into the skillet and sprinkle cheddar evenly over the top.
  6. Make 4 wells in the mixture and crack an egg into each.
  7. Cover and cook 6–10 minutes (or bake at 400°F for 6–9 minutes) until egg whites are set and yolks are done to your liking.
  8. Top with crispy bacon and sliced green onions. Serve hot.

Notes

  • Swap cheddar for pepper jack; add jalapeño for heat.
  • Use frozen diced potatoes to save time.
  • Refrigerate up to 3 days; reheat in a skillet for best texture.
