  • 4 medium Yukon gold potatoes, halved

  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried parsley
  • Optional: fresh parsley for garnish

Instructions

  1. Season chicken with salt, pepper, garlic powder, onion powder, and dried parsley.
  2. Place chicken in a pot or roasting dish with a small amount of water or broth.
  3. Cook until chicken is fully tender and easily shreddable (boil, bake, or slow-cook).
  4. Meanwhile, boil potatoes until fork-tender and drain well.
  5. Cook carrots until tender, either boiled or steamed.
  6. Toss potatoes and carrots with olive oil or butter, salt, and pepper.
  7. Shred chicken into large pieces and season lightly again if needed.
  8. Plate chicken with potatoes and carrots, garnish with fresh parsley, and serve warm.
