A quick one-pan dinner with lean ground beef and potatoes, packed with protein and flavor.

Ingredients

  • 1 lb lean ground beef (93/7 or 90/10)
  • 1 1/2 lbs Yukon gold potatoes, cut into 3/4-inch chunks (about 5 cups)
  • 2 tbsp olive oil, divided
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (plus more to taste)
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste
  • 1/2 cup beef broth (or water)
  • 1 tbsp Worcestershire sauce (optional but delicious)
  • 2 tbsp chopped fresh parsley (for topping)

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add potatoes and a pinch of salt. Cook 8–10 minutes, stirring occasionally, until browned in spots and starting to soften. If needed, splash in 2–3 tbsp water and cover for 2 minutes to help them steam-tender.
  2. Push potatoes to one side. Add remaining 1 tbsp olive oil, then add ground beef. Cook 5–6 minutes, breaking it up, until browned. Drain excess grease if needed.
  3. Stir in onion and cook 2 minutes. Add garlic and cook 30 seconds. Sprinkle in paprika, chili powder, cumin, oregano, salt, and pepper. Stir well.
  4. Add tomato paste and cook 1 minute. Pour in broth and Worcestershire (if using). Stir and scrape up browned bits.
  5. Simmer 3–5 minutes, stirring, until potatoes are tender and everything is coated in a rich, savory sauce. Taste and adjust salt/pepper.
  6. Sprinkle with parsley and serve hot (great with a side salad or steamed green beans).

Notes

  • For a spicier version, add red pepper flakes.
  • Use any potatoes you have on hand.
  • Leftovers reheat well for meal prep.
