Honey BBQ Chicken Rice

A quick and easy honey BBQ chicken served over rice, perfect for a weeknight dinner.

Ingredients

  • lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 cups cooked white rice
  • ½ cup BBQ sauce
  • ⅓ cup honey
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, season with salt, pepper, and smoked paprika, and cook until golden and cooked through.
  3. Reduce heat to medium and add garlic. Cook for 30 seconds until fragrant.
  4. Stir in BBQ sauce, honey, and soy sauce.
  5. Simmer for 3–5 minutes, stirring until chicken is fully coated and the sauce thickens and becomes glossy.
  6. Serve honey BBQ chicken over cooked rice.
  7. Garnish with sliced green onions and serve warm.

Notes

  • Adjust honey and BBQ sauce to taste.
  • Use chicken thighs for extra juiciness.
  • Leftovers store well in the fridge for up to 3 days.
