  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

  • 1/4 cup soy sauce
  • 3 tablespoons BBQ sauce
  • 3 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 tablespoon chopped parsley for garnish

Instructions

  1. Soak the wooden skewers in water for 20 minutes if needed.
  2. In a large bowl, toss the chicken chunks with olive oil, salt, black pepper, garlic powder, and smoked paprika.
  3. Thread the chicken onto the skewers, packing the pieces closely together.
  4. In a small saucepan, combine honey, soy sauce, BBQ sauce, garlic, brown sugar, and rice vinegar. Bring to a gentle simmer. Stir in the cornstarch slurry and cook until the sauce thickens and becomes glossy.
  5. Grill the chicken skewers over medium-high heat for 10 to 12 minutes, turning every few minutes, until cooked through and lightly charred on the edges.
  6. Brush the skewers generously with the honey garlic sauce during the last few minutes of cooking.
  7. Remove from the grill, brush with extra sauce, and sprinkle with chopped parsley before serving.
