  • 1 1/2 pounds boneless, skinless chicken breasts, cut into nugget-size pieces
  • 2 large eggs
  • 1 cup finely grated Parmesan cheese
  • 3/4 cup almond flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • Olive oil spray or avocado oil spray

Instructions

  1. Preheat your air fryer to 400°F.
  2. Pat the chicken pieces dry with paper towels.
  3. In one bowl, beat the eggs.
  4. In a second bowl, mix the Parmesan cheese, almond flour, paprika, garlic powder, onion powder, salt, black pepper, and Italian seasoning.
  5. Dip each piece of chicken into the beaten eggs, then coat it well in the almond flour mixture.
  6. Place the coated chicken pieces in a single layer in the air fryer basket. Do not overcrowd.
  7. Lightly spray the tops with olive oil or avocado oil spray.
  8. Air fry for 5 to 6 minutes. Flip the nuggets, spray again lightly, and cook for another 4 to 6 minutes, or until golden brown and the chicken reaches 165°F inside.
  9. Repeat with the remaining chicken if needed.
  10. Serve hot with your favorite keto dipping sauce.
