Keto Crispy Reuben Roll-Ups

Keto Crispy Reuben Roll-Ups are a low-carb, gluten-free twist on the classic Reuben sandwich. These cheesy roll-ups combine corned beef, Swiss cheese, and sauerkraut in a crispy cheese wrap, perfect as an appetizer or snack.

  • 2 cups shredded mozzarella (or a mozzarella/cheddar blend)
  • 8 slices Swiss cheese
  • 16 slices deli corned beef
  • 1 cup sauerkraut, well-drained and patted dry
  • 1/2 cup Thousand Island (or sugar-free Russian dressing)
  • 1 tsp caraway seeds (optional, for classic Reuben flavor)
  • 1 tbsp chopped fresh parsley (optional garnish)

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Make the cheese “wraps”: Spoon 8 small piles of shredded cheese onto the parchment (about 1/4 cup each) and flatten into 4–5 inch circles.
  3. Bake for 6–8 minutes until melted, bubbly, and the edges turn golden. Let sit 1 minute so they firm up but are still pliable.
  4. Assemble: On each cheese round, place 2 slices corned beef, 1 slice Swiss, a small spoonful of drained sauerkraut, and a drizzle of dressing. Sprinkle with caraway seeds if using.
  5. Roll up tightly like a wrap. Place seam-side down on the baking sheet.
  6. Return to the oven for 3–5 minutes to crisp and “set” the roll-ups.
  7. Serve warm with extra dressing for dipping and a sprinkle of parsley.

Notes

  • Drain sauerkraut well to prevent soggy roll-ups.
  • Use sugar-free dressing for a strict keto option.
  • Let cheese wraps cool slightly before rolling to avoid breaking.
