  • 1/4 teaspoon black pepper
  • 4 cups cauliflower rice
  • 1 tablespoon butter or olive oil
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon lemon juice

  • 1 avocado, sliced
  • Extra parsley for garnish

Instructions

  1. Toss shrimp with olive oil, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper.
  2. Heat a skillet or grill pan over medium-high heat.
  3. Cook shrimp for 2 to 3 minutes per side until pink and lightly charred.
  4. Remove shrimp from heat.
  5. Heat butter or olive oil in a separate skillet over medium heat.
  6. Add minced garlic and cook for 30 seconds.
  7. Stir in cauliflower rice, salt, and black pepper.
  8. Cook for 5 to 6 minutes, stirring often, until tender.
  9. Stir in parsley.
  10. Whisk melted butter, lemon juice, minced garlic, parsley, salt, and black pepper in a small bowl.
  11. Divide cauliflower rice between bowls.
  12. Top with grilled shrimp and sliced avocado.
  13. Spoon garlic herb butter sauce over shrimp.
  14. Garnish with extra parsley and black pepper.
  15. Serve warm.
