30-Minute Keto Italian Sausage Soup – Blazing Flavor & Easy Bliss

A rich and creamy keto Italian sausage soup packed with zucchini and spinach, ready in just 30 minutes.

  • 1 tablespoon butter
  • 1/2 onion, chopped
  • 2 cloves garlic
  • 4 cups chicken bone broth
  • 8 oz cream cheese
  • 1 lb Italian sausage (mild or hot)
  • 1 (14 oz) can diced tomatoes
  • 1 zucchini (small), chopped
  • 2 cups chopped spinach
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • parmesan cheese
  • 1/4 teaspoon cayenne pepper (to taste)

Instructions

  1. Melt the butter over medium-high heat in a large pot. Add the onion, garlic, and Italian sausage. Cook for 4–5 minutes until the onion is soft and the meat is browned.
  2. Pour in three cups of chicken bone broth. Add the chopped zucchini, dried basil, oregano, bay leaf, cayenne pepper (if desired), and diced tomatoes. Bring this mixture to a boil before lowering the heat to let it simmer.
  3. In a blender, combine the remaining cup of bone broth with cream cheese. Blend until smooth. Pour this creamy mixture back into the soup and stir well.
  4. Mix in the chopped spinach. Allow it to wilt before serving. You can let it simmer longer if you prefer deeper flavors.
  5. Ladle the soup into bowls and top each serving with shredded parmesan cheese for added richness.

  • Use mild or hot Italian sausage based on your preference.
  • Adjust cayenne pepper for desired spice level.
