A quick and easy keto-friendly snack featuring mini sweet peppers stuffed with creamy tuna and melted cheese.

  • 8 mini sweet peppers, halved lengthwise and seeds removed
  • 2 cans tuna in water, drained well
  • 3 tablespoons mayonnaise
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chopped parsley, optional

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet or baking dish with parchment paper.
  2. Slice the mini peppers in half lengthwise and remove the seeds. Arrange them cut-side up on the prepared pan.
  3. In a medium bowl, mix the drained tuna, mayonnaise, cream cheese, Dijon mustard, garlic powder, onion powder, salt, and black pepper until creamy and well combined.
  4. Spoon the tuna mixture evenly into each pepper half.
  5. Top each stuffed pepper with shredded cheddar cheese.
  6. Bake for 10 to 12 minutes, or until the peppers are slightly tender and the cheese is melted.
  7. Broil for 1 to 2 minutes at the end if you want the cheese more bubbly and golden.
  8. Sprinkle with chopped parsley if desired and serve warm.
