Meatballs and Mashed Potatoes

  • 1 lb frozen or homemade beef meatballs
  • 2 cups mashed potatoes
  • 1 cup brown gravy
  • 1 cup baby carrots
  • 1/2 cup green peas
  • 1 tbsp butter
  • Salt and black pepper, to taste

Instructions

  1. Cook the meatballs according to package instructions or until heated through and browned.
  2. Warm the mashed potatoes in a saucepan or microwave until creamy.
  3. Heat the brown gravy in a small saucepan over medium heat.
  4. In a skillet, melt butter and sauté carrots until tender, about 6–8 minutes.
  5. Add peas to the carrots and cook for 2 more minutes. Season with salt and pepper.
  6. Plate the mashed potatoes, top with gravy, and serve with meatballs and vegetables on the side.
