Mediterranean Chicken Bowl

A healthy and flavorful Mediterranean chicken rice bowl with grilled chicken, fresh vegetables, and tzatziki sauce.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups cooked white rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 ripe avocado, diced
  • ½ cup crumbled feta cheese
  • ½ cup pickled red onions
  • ½ cup tzatziki sauce
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley or dill, chopped (for garnish)

Instructions

  1. Season chicken with olive oil, garlic powder, paprika, oregano, salt, and pepper.
  2. Grill or pan-sear chicken over medium-high heat for 5–6 minutes per side until cooked through and charred.
  3. Rest chicken for 5 minutes, then cut into bite-sized pieces.
  4. Assemble bowls by adding cooked rice as the base.
  5. Arrange grilled chicken, tomatoes, cucumber, avocado, feta, and pickled red onions on top.
  6. Spoon tzatziki sauce over the bowl.
  7. Garnish with fresh herbs and serve.

Notes

  • Use leftover rice for quicker prep.
  • Adjust seasoning to taste.
  • Store leftovers in an airtight container for up to 2 days.
