35-Minute One Pan Sausage and Rice – Irresistibly Easy Dinner

one pan sausage and rice

A simple one-pan meal with smoked sausage, rice, black beans, and corn, topped with melted cheese.

Ingredients

Scale
  • 14 oz smoked sausage (kielbasa or andouille), sliced into coins
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice (uncooked)
  • 2 3/4 cups chicken broth
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel), undrained
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt (or to taste)
  • 1 1/2 cups shredded Monterey Jack (or mozzarella)
  • Optional toppings: chopped cilantro, sliced green onions, jalapeños, sour cream, lime wedges

Instructions

  1. Heat a large skillet over medium-high heat. Add olive oil and brown the sliced sausage for 3–4 minutes, stirring occasionally.
  2. Add onion and cook 2–3 minutes until softened. Stir in garlic for 30 seconds.
  3. Stir in uncooked rice and toast for 1 minute, stirring so it doesn’t stick.
  4. Add chicken broth and Rotel. Stir in chili powder, cumin, smoked paprika, black pepper, and salt. Bring to a gentle simmer.
  5. Cover and reduce heat to low. Cook 18–20 minutes until rice is tender and most liquid is absorbed.
  6. Stir in black beans and corn. Cover again and cook 3–5 minutes until warmed through.
  7. Sprinkle shredded cheese over the top. Cover 2–3 minutes until melted (or broil briefly if your skillet is oven-safe).
  8. Scoop and serve warm with your favorite toppings.

Notes

  • Use oven-safe skillet for broiling cheese.
  • Adjust spices to taste.
