- 4 medium sweet potatoes
- 1 lb lean ground turkey (93/7)
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 tbsp taco seasoning
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt (plus more to taste)
- 1/4 tsp black pepper
- 1/2 cup salsa (or tomato sauce)
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn (canned, drained or frozen, thawed)
- 1 cup shredded Mexican blend cheese (or cheddar)
- 2 tbsp chopped fresh cilantro (plus more for topping)
- Preheat oven to 400°F. Wash and dry the sweet potatoes, then poke each one several times with a fork.
- Place sweet potatoes on a baking sheet and bake for 40–45 minutes, or until fork-tender.
- While potatoes bake, heat olive oil in a large skillet over medium heat. Add onion and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
- Add ground turkey and cook until browned, breaking it up as it cooks (about 6–8 minutes).
- Stir in taco seasoning, cumin, smoked paprika, salt, pepper, and salsa. Mix in black beans and corn, then simmer 2–3 minutes until warmed through and saucy.
- When sweet potatoes are done, let cool slightly. Slice each potato lengthwise and gently scoop out a little of the center (leave a sturdy border).
- Fill each sweet potato “boat” with the turkey mixture. Top with shredded cheese.
- Return to the oven for 8–10 minutes (or broil 1–2 minutes) until cheese is melted and bubbly.
- Finish with chopped cilantro and serve warm.
Notes
- Use leftover turkey mixture for tacos or salads.
- Swap ground turkey for chicken or beef if preferred.
