1 lb cooked shrimp, peeled & deveined (tails off)
2 ripe avocados, diced
1 1/2 cups cherry tomatoes, halved (mix of red/yellow)
1/3 cup red onion, finely chopped
1/3 cup fresh cilantro, chopped
2 Tbsp fresh lime juice (plus lime wedges for serving)
2 Tbsp olive oil
1 small garlic clove, minced
1/2 tsp kosher salt (to taste)
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
Instructions
Prep the mix-ins: Dice avocados, halve cherry tomatoes, and finely chop red onion and cilantro.
Make the dressing: In a small bowl, whisk together lime juice, olive oil, garlic, salt, pepper, and red pepper flakes (if using).
Toss gently: Add shrimp, avocado, tomatoes, onion, and cilantro to a bowl. Pour dressing over the top and gently toss until everything is coated (try not to mash the avocado).
Serve: Taste and add more salt/lime if needed. Serve right away with lime wedges.
Notes
Best served fresh; avocado may brown if stored.
Adjust spice level by adding more or less red pepper flakes.
