35-Minute Skillet Sausage Potatoes and Peppers Masterpiece

A hearty one-pan meal with smoked sausage, potatoes, and colorful bell peppers, cooked to perfection in a skillet for an easy weeknight dinner.

  • 1 pound smoked sausage or kielbasa, sliced into rounds
  • 1 1/2 pounds baby potatoes, cut into bite-size pieces
  • 1 medium yellow onion, sliced
  • 1 small red bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a pot of salted water to a boil. Add the potatoes and cook for 8 minutes until just fork-tender. Drain well.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  3. Add the sliced sausage and cook for 4 to 5 minutes, turning occasionally, until browned on both sides. Remove and set aside.
  4. Add the remaining olive oil and butter to the skillet.
  5. Add the potatoes in a single layer and cook for 8 to 10 minutes, stirring occasionally, until golden and crisp.
  6. Stir in the onion and red bell pepper. Cook for 4 to 5 minutes until softened and lightly caramelized.
  7. Add the garlic, paprika, garlic powder, onion powder, oregano, salt, and black pepper. Stir well.
  8. Return the sausage to the skillet and toss everything together.
  9. Cook for another 2 to 3 minutes until heated through and well combined.
  10. Sprinkle with fresh parsley and serve hot.

Notes

  • Use pre-cooked sausage for faster cooking.
  • Adjust spices to your taste.
  • For crispier potatoes, avoid overcrowding the skillet.
