Slow Cooker Garlic Herb Chicken – Tender 6-Hour Magic Meal

Tender chicken thighs cooked with potatoes, carrots, and green beans in a garlic herb sauce.

  • 4 bone-in, skin-on chicken thighs
  • 1 lb baby red potatoes, diced
  • 4 medium carrots, peeled
  • 8 oz fresh green beans, trimmed
  • 1/2 red onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tbsp butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Place the diced baby potatoes and chopped red onion in the bottom of the slow cooker.
  2. Add the carrots and pour in the chicken broth.
  3. In a small bowl, mix the olive oil, melted butter, garlic, Italian seasoning, paprika, salt, and black pepper.
  4. Rub the seasoning mixture all over the chicken thighs, then place the chicken on top of the vegetables.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and the potatoes are tender.
  6. Add the green beans during the last 30 minutes of cooking so they stay bright and tender.
  7. Spoon some of the cooking juices over the chicken and vegetables, then sprinkle with fresh parsley before serving.

Notes

  • For crispier skin, broil the chicken for 2-3 minutes after slow cooking.
  • You can substitute sweet potatoes for red potatoes.
  • Store leftovers in an airtight container for up to 3 days.
