A simple and flavorful slow cooker meal combining tender lemon herb chicken thighs with fluffy rice.

Ingredients

  • 4 bone-in, skin-on chicken thighs (or boneless/skinless)
  • 1 cup long-grain white rice (uncooked)
  • 2 1/2 cups chicken broth
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 lemon (zest + juice), plus lemon wedges for serving
  • 1 1/2 tsp Italian seasoning (or dried oregano + thyme)
  • 1 tsp dried parsley (or 2 tbsp fresh, chopped)
  • 1 tsp kosher salt (plus more to taste)
  • 1/2 tsp black pepper
  • 2 tbsp olive oil or melted butter

Instructions

  1. Pat chicken thighs dry. Season with salt, pepper, Italian seasoning, and parsley.
  2. Add sliced onion and garlic to the bottom of the slow cooker. Pour in chicken broth, lemon zest, and lemon juice.
  3. Place chicken thighs on top. Cover and cook on LOW for 4–5 hours (or HIGH for 2–3 hours) until chicken is cooked through.
  4. Remove chicken to a plate. Stir uncooked rice into the broth mixture.
  5. Return chicken on top of the rice. Cover and cook on HIGH for 30–45 minutes, until rice is tender and liquid is absorbed.
  6. Fluff rice, spoon into bowls, top with chicken, and finish with lemon wedges and extra herbs if you like.

Notes

  • For crispier skin, broil the chicken for 2–3 minutes after slow cooking.
  • Adjust broth quantity if using different rice varieties.
  • Store leftovers in an airtight container for up to 3 days.
