  • For the Chicken:
    • 2 chicken leg quarters
    • 1 tablespoon olive oil
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon seasoned salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon smoked paprika
    • 1/4 teaspoon cayenne pepper
  • For the Mashed Potatoes:
    • 2 pounds russet potatoes, peeled and cut into chunks
    • 4 tablespoons butter
    • 1/2 cup whole milk
    • 1/4 cup heavy cream
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
  • For the Green Beans:
    • 1 pound green beans, trimmed
    • 4 slices bacon, chopped
    • 1/2 small onion, diced
    • 1 teaspoon garlic, minced
    • 1/2 cup chicken broth
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
  • For the Corn:
    • 2 ears corn, halved
    • 2 tablespoons butter
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Tomatoes:
    • 2 large tomatoes, sliced
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Toast:
    • 4 slices white bread
    • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F.
  2. Pat the chicken leg quarters dry and rub with olive oil.
  3. In a small bowl, mix the paprika, garlic powder, onion powder, seasoned salt, black pepper, smoked paprika, and cayenne pepper.
  4. Season the chicken all over with the spice mixture and place it on a baking sheet.
  5. Bake for 40 to 45 minutes, or until the chicken is golden brown and cooked through.
  6. While the chicken bakes, boil the potatoes in salted water for 15 to 18 minutes until fork tender. Drain well.
  7. Mash the potatoes with butter, milk, heavy cream, salt, and black pepper until smooth and creamy.
  8. In a skillet, cook the chopped bacon until crisp. Add the onion and cook until softened.
  9. Stir in the garlic, green beans, chicken broth, salt, and black pepper. Cover and simmer for 15 to 20 minutes until tender.
  10. Boil the corn for 8 to 10 minutes until tender. Drain and brush with butter, then season with salt and black pepper.
  11. Lightly toast the bread and spread with butter.
  12. Season the tomato slices with salt and black pepper.
  13. Serve the baked chicken with mashed potatoes, green beans, buttered corn, sliced tomatoes, and toast.

Notes

  • Adjust spice levels to taste.
  • For crispier chicken, broil for the last 5 minutes.
  • Substitute half-and-half for heavy cream if needed.
