Spicy Garlic Chicken Noodles

A quick and flavorful dish featuring tender chicken, crisp broccoli, and noodles tossed in a spicy garlic sauce.

  • 1 1/2 lb boneless, skinless chicken thighs (or breasts), cut into 1-inch pieces
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1012 oz noodles (lo mein, linguine, spaghetti, or rice noodles)
  • 34 cups broccoli florets (or broccolini)
  • 2 tbsp neutral oil (avocado/vegetable), divided
  • 1/3 cup low-sodium soy sauce
  • 2 tbsp oyster sauce (or hoisin for a sweeter swap)
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar (or lime juice)
  • 1 tbsp sesame oil
  • 12 tbsp chili garlic sauce (like sambal oelek) or 12 tsp red pepper flakes (to taste)
  • 6 cloves garlic, minced (about 2 tbsp)
  • 1 tbsp fresh grated ginger (optional but great)
  • 1/3 cup chicken broth or water
  • 1 tbsp cornstarch + 2 tbsp water
  • Sliced green onions, chopped cilantro, sesame seeds, extra chili flakes (optional)

Instructions

  1. Boil noodles according to package directions. Drain and toss with a tiny drizzle of oil so they don’t stick.
  2. In the same boiling water, cook broccoli 1–2 minutes until crisp-tender, then drain.
  3. In a bowl, toss chicken with soy sauce, cornstarch, garlic powder, and pepper.
  4. Heat 1 tbsp oil in a large skillet over medium-high heat. Add chicken in a single layer and cook 5–7 minutes, turning until browned and cooked through. Remove to a plate.
  5. Reduce heat to medium. Add remaining 1 tbsp oil, then add garlic (and ginger) and stir 20–30 seconds until fragrant.
  6. Pour in the Spicy Garlic Sauce ingredients (soy sauce, oyster sauce, honey, vinegar, sesame oil, chili garlic sauce, broth). Simmer 1–2 minutes.
  7. Stir in the cornstarch slurry and simmer 30–60 seconds until glossy and slightly thick.
  8. Add noodles, broccoli, and chicken back into the skillet. Toss until everything is coated and hot, 1–2 minutes.
  9. Top with green onions/cilantro and sesame seeds.

Notes

  • Adjust chili garlic sauce or red pepper flakes to control spiciness.
  • Use hoisin sauce instead of oyster sauce for a sweeter flavor.
  • Blanching broccoli keeps it crisp-tender; you can also stir-fry it.
