  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 tbsp milk
  • 1 1/4 cups fresh strawberries, diced
  • 1 tbsp all-purpose flour, for tossing strawberries
  • 1 cup powdered sugar
  • 2 to 3 tbsp milk
  • 1/2 tsp vanilla extract
  • 5 to 6 fresh strawberries, halved

Instructions

  1. Preheat your oven to 350°F. Grease and line a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the 1 1/2 cups flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each one. Stir in the vanilla extract.
  5. Mix in the sour cream and milk until smooth.
  6. Gradually add the dry ingredients and mix just until combined.
  7. Toss the diced strawberries with 1 tbsp flour, then gently fold them into the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  11. To make the glaze, whisk together powdered sugar, milk, and vanilla until smooth and pourable.
  12. Drizzle the glaze over the cooled cake and top with halved fresh strawberries. Slice and serve.
