Sweet Pepper & Sausage Pasta

A quick and flavorful pasta dish featuring sweet bell peppers, savory sausage, and a rich tomato sauce.

  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 14 ounces smoked sausage or Italian sausage, sliced into rounds
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 small yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • 1/3 cup grated Parmesan cheese, plus more for topping
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the sliced sausage and cook for 4 to 5 minutes until browned and slightly crisp on the edges.
  4. Add the bell peppers and onion to the skillet and cook for 4 to 5 minutes until softened.
  5. Stir in the garlic and cook for 30 seconds until fragrant.
  6. Add the diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, black pepper, and red pepper flakes.
  7. Stir everything together and let the sauce simmer for 5 to 7 minutes until slightly thickened.
  8. Add the cooked penne pasta to the skillet and toss until fully coated in the sauce.
  9. Stir in the Parmesan cheese and cook for 1 to 2 minutes until everything is hot and well combined.
  10. Garnish with chopped parsley and extra Parmesan before serving.

Notes

  • Use any type of sausage you prefer.
  • Adjust the red pepper flakes for more or less heat.
  • Serve with extra Parmesan cheese on the side.
