30-Minute Teriyaki Chicken Fried Rice That Beats Takeout

A quick and flavorful teriyaki chicken fried rice bowl that brings the taste of takeout to your kitchen.

Ingredients

  • 1 lb boneless, skinless chicken thighs, sliced
  • 3 cups cooked rice (day-old preferred)
  • 2 tbsp olive oil or sesame oil
  • 2 eggs, lightly beaten
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 3 green onions, sliced
  • ¼ cup teriyaki sauce
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • ½ tsp ground ginger
  • Salt and black pepper, to taste
  • Black sesame seeds, for garnish

Instructions

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat.
  2. Add chicken, season with garlic powder, ginger, salt, and pepper, and cook until golden and fully cooked.
  3. Pour teriyaki sauce over the chicken and toss until sticky and glazed. Remove chicken from skillet and set aside.
  4. Add remaining oil to the skillet and pour in beaten eggs. Scramble until just set.
  5. Add cooked rice and frozen vegetables. Stir-fry until heated through and lightly crisped.
  6. Stir in soy sauce and half of the green onions.
  7. Top rice with teriyaki chicken and garnish with remaining green onions and black sesame seeds. Serve hot.

Notes

  • Use day-old rice for best texture.
  • Adjust sauce quantity to taste.
  • Substitute any vegetables you prefer.
