  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long grain white rice
  • 2 cups water or chicken broth
  • 1 tablespoon butter or olive oil
  • 2 tablespoons chopped parsley or cilantro
  • 1 tablespoon finely chopped onion
  • 1/4 teaspoon salt
  • 2 cups chopped greens
  • 1/2 cucumber, chopped
  • 1 medium tomato, chopped
  • 1/4 small white onion, sliced
  • 1/2 red bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Pat the whole fish dry with paper towels.
  2. Rub the fish with olive oil, paprika, garlic powder, onion powder, dried thyme, crushed red pepper flakes, salt, and black pepper.
  3. Let the fish sit for 10 minutes.
  4. Rinse the rice under cold water until the water runs clear.
  5. Add rice, water or broth, butter, chopped onion, and salt to a saucepan.
  6. Bring to a boil, then reduce heat, cover, and cook for 15-18 minutes.
  7. Remove rice from heat and fluff with a fork.
  8. Stir in chopped parsley or cilantro.
  9. Heat a grill pan or skillet over medium heat.
  10. Cook the whole fish for 6-8 minutes per side.
  11. Combine greens, cucumber, tomato, onion, and red bell pepper in a bowl.
  12. Drizzle salad with olive oil and lemon juice, then season with salt and black pepper.
  13. Toss salad gently.
  14. Plate the herbed rice, salad, and grilled fish.
  15. Serve immediately.
