1 1/2 pounds boneless skinless chicken breasts or chicken tenders
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
2 cups sliced carrots
1 small red onion, thinly sliced
2 garlic cloves, minced
1 tablespoon olive oil
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon lemon juice
1 tablespoon water
1/4 teaspoon black pepper
2 green onions, sliced, for garnish
Instructions
Pat the chicken dry with paper towels and season both sides with paprika, garlic powder, onion powder, salt, black pepper, and red pepper flakes.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and cook for 4–5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Add 1 tablespoon olive oil to the same skillet. Stir in the sliced carrots and red onion.
Cook for 5–7 minutes, stirring often, until the carrots are tender and the onions begin to soften.
Add the minced garlic and cook for 30 seconds, until fragrant.
Stir in the honey, soy sauce, lemon juice, water, and black pepper.
Return the chicken to the skillet and spoon the sauce, carrots, and onions over the top.
Simmer for 2–3 minutes, until the sauce thickens slightly and coats the chicken.
