Ingredients

  • 2 lbs beef chuck roast or beef stew meat, cut into large chunks
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium yellow onion, chopped
  • 3 carrots, peeled and cut into chunks
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt, or to taste
  • 1 bay leaf
  • 1 tablespoon cornstarch mixed with 2 tablespoons water, optional for thickening

Instructions

  1. Pat the beef dry with paper towels, then season.
  2. Heat olive oil in a pot. Sear beef in batches until browned. Remove and set aside.
  3. Reduce heat. Add butter, onion, and carrots to the pot. Cook for 4–5 minutes.
  4. Add garlic and tomato paste. Stir for 1 minute.
  5. Sprinkle flour over the vegetables. Stir well.
  6. Slowly pour in beef broth while scraping browned bits.
  7. Stir in Worcestershire sauce and add bay leaf. Return beef to pot.
  8. Simmer covered for 1 hour 45 minutes to 2 hours until beef is tender.
  9. Remove bay leaf. Optionally thicken gravy with cornstarch slurry.
  10. Serve hot over mashed potatoes, rice, or buttered noodles.
